Ingredients

1 (16 oz.) package of prepared polenta

Nonstick cooking spray

1 tsp of EVOO

1 cup shredded parmesan Reggiano

1-2 tbsp fresh chopped thyme

Coarsely ground sea salt

Directions

PARMESAN POLENTA FRIES DIRECTIONS:

  1. Slice polenta into long thin slices resembling french fries.
  2. Place in a bowl and add parmesan, thyme, salt and pepper.

 

DIPPING SAUCE DIRECTIONS:

  1. Stir together 1 tsp. of Calabrian chili and 3 tbsp of mayonnaise.

 

*For optimal results, place half of the fries in the basket. Cook at 400 degrees for ten minutes, then flip and cook for another seven minutes until crispy. Transfer to platter and repeat process. Serve with dipping sauce and garnish with coarse sea salt.

*Pair with a Calabrian Chili Mayo for a special snack or side dish.
